Why We Chose the Hard Way
Nearly all flour consumed in modern bakeries is stripped of its nutrient-rich germ and aromatic bran during high-speed industrial steel roller milling. This is done to maximize shelf stability for overseas shipping, but it strips away the very essence of what wheat tastes like.
At Green Leaf Bakery, we believe bread should taste like the Pacific Northwest soil from which it sprouted. Every week, whole grains from family-owned farms across the Palouse and Willamette Valleys arrive at our door. We crush these grains between heavy Austrian granite stones at gentle, low temperatures, ensuring the delicate vitamin E and germ oils are never damaged.
The Oregon White Oak Levain
We have never used a single granule of commercial baker's yeast. Our starter culture—affectionately called "The Mother"—was captured from wild wild grapes in the Columbia River Gorge in October 2017. Living in charred Oregon white oak casks, it produces an unmistakable depth of flavor balanced between gentle lactic sweetness and crisp acetic tang.
The 14-Ton Hearth
Bread is fundamentally an elemental transformation: grain, water, salt, and fire. In 2019, master stonemasons erected our 14-ton wood-fired hearth oven using local basalt and refractory volcanic stone. We fuel it exclusively with seasoned apple and hazelnut wood collected from orchard trimmings.
When loaves land directly on the 500°F stone deck, radiant heat locks in moisture while steam caramelizes the exterior starches, creating our signature blistered mahogany crust.
